Right Click on Kate and click on "Add Override Materials"
Right Click again Show in Element Viewer -> Model
Expand "Materials" by click + icon next to it
Find "mi_cmmhair019_taa" and right click on it.
Add Attribute -> String
Type $basetexture
Hair will be purple and black checkerboard
Again expand "mi_cmmhair019_taa" by click + icon next to it
Right next to $basetexture paste
models\CozyChicken\DeadByDaylight\characters\Kate\Outfit01\T_CMMHair001_20_BC.vtf
That's pretty much it and I said I'd suggest you to do research for Overriding Materials in SFM which will be easier to understand
