The toolbars are setup on the remote control, so you should be able to use them as long as the antenna is tuned on (there should be a button for that on the underside).
For mine, I filled one medium cargo container with each type of item (so 3375L each) and compared the mass.

For the newer ships I have also been rounding down the numbers, instead of leaving them or rounding up, since the number is supposed to be more of an indication of how it compares to other ships in the fleet (as I don't think its a thing that will catch on with most SE players) and also to make the ship names a little more interesting without just throwing random numbers in the name.
2) Platinum ingots have a higher density than gold, so a full medium cargo container gives me 71,808.51 kgs, and a full connectors is 24,510.64kg. At least according to some tests I did in 2018, so maybe things have changed.
Still, that only gives enough for a total of 963, but I think I know what happened, I may have included the cargo space of the gatling turrets from the armed version in the calculation and rounded up.
1) I get an empty mass of 41,162 when I copy/paste this into a Creative.(your description suggests 40,390)
2) Your normal naming scheme for small-grid ships has the number being multiplied by 100, for the cargo capacity. 967 * 100 = 96,700 kg... with only 4527 L of cargo space, that'd need a density of 21.36. There is no vanilla item that can be stuffed into cargo with a density above 20 (which is gold/plat/uranium ingots) Stuffing cargo & connector with gold ingots gave me a cargo mass of 87,057 kg (total grid mass 128,219) - though I will confirm it was able to fly on Alien at sea level with this load, I think the number in the name is misleading on this one.
Not a bad little ship, though! Just wish for bigger dedicated cargo drones, so i can automate ice-hauling from my ice mine to my main base :)
