Beside unsubscribing an deleting the tracks manually, try to also delete the mods archive file from AoE\mods.
Steam normally uninstalls mods by verifying your game cache. Without steam just doesn't restore a mod when verifying, so it might be that steam still reloads the mod, for you never reset AoE to 'default' by verifying.
After subscribing to Unreal Gold, you should be able to see an entry for workshop content in your download list.
Beside this, after finishing, don't cancel the intros before the chess one starts, that's the time where AoE\ tries to extract new mod data. Canceling the intros too early also candels the extraction.
But there should also be the new mod archives present after starting the game once. So you could also extract them manually then.
Whenever i start up Age of Empires 2, the Tournament soundtracks are still playing instead of the Unreal Gold ones. It's quite strange, since i'm both unsubscribed from the Tournament 99 soundtracks and removed them manually out of the music folders.
I got Unreal Gold both part 1 and part 2 subscribed and installed, yet i can't find their tracks and none of them are being played within the game. It could be a mere bug through the workshop, though if you know of any hints to straighten this out would be greatly appriciated. :3
