How to access my save game files
I would assume, you need to access the same way from the Steam Desktop interface.
Again, this is only an assumption. Otherwise, you could try to use the PC version and access it from there, after you've synced to the cloud.

You are able to play Game Pass or Microsoft Games from the Steam Deck.
So that means, you could probably play from Uplay, Origin, and Battle.Net as well. Probably.
They have not confirmed nor being asked. Only Game Pass that we're being questioned.

Now, the Steam Deck is able to be upgraded with NVMe SSD (not soldered to the motherboard), however, it is not meant for the end-user.
Only for those who are willing to void their warranty, and know what they are doing.
Upgrading won't be easy, not like PS5 or Xbox console.
