I haven't bothered to update the solid sphere asteroids, as you can generate these with SEToolbox now.

Asteroids don't need to be hollow to place a gravity generator inside of it. Using SEToolbox allows you to move the gravity generator anywhere.
Any ship/station can happily exist inside of the asteroid. Ships however will drift, and will break apart if they overlap the edge of an asteroid. A Station however does not have this issue.
I have just added instructions here about doing this.

Hey Screaming angels, I asked my friend Sektan if he could make a asteroid sphere AKA planet that was solid but had a hollow core in the middle small enough for a sphere grav. gen to fit, that way there would be no huge holes on the surface going to the core but he said the problem is that SEtoolbox makes it solid when exporting, since it's your program is there a way to make the asteroid have a hollow core and a thick solid layer?

if you replaced the stock asteroid, Space Engineers will generate the ore.
Otherwise if you just opened it as is, no.
