x6 Rock Blocks
Each rock block is made in the same amount of time as a normal block, meaning that for each stonemason making a single type of block, there needs to be six more stonemasons making solely rock blocks and 1-2 stone miners per stonemason.
For example, if I wanted to make 200 of any one of your blocks in a day (which would be necessary for large buildings), I require (with copper tools):
x14400 Stone Rubble (~120 Stone Miners)
x1200 Rock Blocks (~50 Stonemasons + ~8-10 to make the necessary blocks)
You should lower the amount of stone rubble from 12 to 6 per every 2 rock block and 3 modded block for every 6 rock block. This massively reduces workers needed and makes the blocks way more accessible, helping lag and enjoying your mod more.
