The Perspective Walls mod is an example of a mod defining itself as loading before a vanilla file.
You could check how that mod does it, and do the same.

I'm currently making a large pack for most cervids, though once im finished i can try my damndest to make the cats and dogs look decent.
If you've ever taken a good look at the cats and dogs in dwarf they're practically a rainbow of colours so that'll change alot of things, but with some compromise i was planning on making some inaccurate but good looking sprites, we'll see how it ends up once i finish this and another mod pack for devonian creatures lol
I also see no reason to why they only have a graphics token for [LENGTH] when theres: https://dwarffortresswiki.org/index.php/DF2014:Creature_token#BP_APPEARANCE_MODIFIER quite a few appearance modifiers used, i forgot to state before that this is the same issue that the creator of ECG ran into.
Although i've looked through their code several times before for references i can't recall whether they use the length to influence the graphics though I can guarentee they do.
Like with my deer i have the antler length change which set of 3 antler sprites (theres 3 for each length) to randomly choose a pair of antlers from.
TLDR the way the graphics tokens are currently set up doesn't support graphical variation based on anything other than a tissues colour or length.
Sadly what i did is only accomplishable with any descriptors length, as no other tokens are supported with the current graphics.
I worked within the limitations of the [CONDITION_TISSUE_LAYER] token, which again currently only supports [TISSUE_(MAX or MIN)_LENGTH]. the only thing that affects the graphics with my horses is the length of any part of their body's hair and obviously the colour, it doesnt take into account any body size or ear shape or anything, although i wish it could.

The guy who made Extended Creature Graphics wants to do the exact thing you did by having the graphics be accurate to their descriptions. He said such a thing would be very difficult, and he wouldn't know how to begin with. How did you accomplish such a feat? Would you kindly tell the community as well as the modder who created Extended Creature Graphics, so the world may enjoy this technological advancement, in the form of dwarves which look like their description?
