Forward and backward strong: yellow soul, fires a chargeable projectile horizontally
Upward strong: yellow soul, fires a chargeable projectile vertically
Downward strong: orange soul, summons two small walls which hurt enemies on either side of you
Neutral light attack and downtilt light attack: orange soul, summons an horizontal arrow which punches a foe
Upwards light attack: orange soul, summons an arrow which punches a foe
Forwards and backwards light attack: blue soul changes its gravity to slam into an enemy in front of it
Upspecial: red soul, allows you to fly across the screen in whatever direction you want to
Forward special: blue soul, launches you forward at high speeds, slamming you into enemies
Downward special: purple soul, stops you from moving vertically and lets you move wherever you want horizontally
Neutral special: red soul, summons a red field around you which damages enemies
Block: obviously green soul
Rolls and dodges: cyan soul, teleports you (I did this because some believe the cyan soul to be the source of Sans's teleportation powers)

Specifically air attacks:

Down strong: blue soul slams itself downwards, damaging enemies
Backwards light attack: orange soul summons a small wall which damages enemies
Neutral light attack: orange summons a circle of damage around it, temporarily pausing its own motion and damaging enemies
