Another way is to find a spawn point and select "edit target" on the form that it spawns. (You still might have to follow a few back links, since some of the spawns reference enemy forms which inherit from levelled lists).
There are several pitfalls that you need to watch out for. A lot of spawns in the game (including most draugr spawns) are "ambush" spawns and will not work properly for enemies which have a different body type to the ones which already spawn there. Ambush spawns also tend to set the combat AI type of the spawned enemy, which is super annoying because it means that magic or ranged weapon draugr can't spawn properly at a spawn point for a melee draugr.
One way to find the levelled list forms is to pick an enemy which already spawns there (e.g. an ordinary draugr) and right click then select "find all references". Some of the forms inherit from others so you might have to follow the chain back a few links to get to the list.
