Schleswig-Holstein is the modern state. The Duchy of Holstein was one of a few different independent states that existed up until 1866 (when they merged and became a part of Prussia.) Schleswig was a separate entity and controlled by Denmark while the Duchy of Holstein existed.
"Schleswig-Holstein" never actually existed as an independent state, so it wouldn't make sense to have it unless you were to make a collection of all federal German states.

Unique Ability: (Between a Kingdom and the Empire) - 50% of excess Happiness is added to your Culture Output. Each Great Work you own provides +2 Culture.
Unique Unit: (Schwert Soldner - Swordsman) - Costs no Gold Maintenance, and has a 50% chance to withdraw from an enemy melee attack.
Unique Building: (Wasserschloss - Castle) - Requires nearby Coast, but is available for half cost and built for free in new cities from the Medieval Era on. Provides +3 Culture and a Great Work of Writing slot, in addition to standard castle bonuses.
