The graphics don't line up quite as well for the other ones you've listed, so they'll take a bit longer.
Look at the graphics of the unit, then the slp associated with the graphics, then find these slps in Age2HD/resources/_common/drs/graphics. A similar process is illustrated in this article (http://aok.heavengames.com/cgi-bin/forums/display.cgi?action=ct&f=26,42264,,30) although it has a slightly different focus and is aimed for the CD version, with actual drs files instead of a directory.
Copy the cavalier files to Age2HD/mods/{mod name}/resources/_common/drs/graphics, and then rename them to match the Paladins. Depending on what units you want to change, you may have to delete or duplicate frames to make the frame count match. You'll want Turtle Pack for this (aok.heavengames.com/blacksmith/showfile.php?fileid=11349)
You now have a local mod, ready for your own private use or publishing
Replacing Attila without editing Cataphracts and Belisarius requires data editing, which breaks multiplayer compatibility.
