There's an option you can evolve to achieve peaceful victory. Infecting everyone is a requirement, but you also need this ability.
You can have non-lethal dullahans, you can get lethality-reducing types from other sources, which work like peace-keepers, making the more dangerous monsters girls less dangerous.
