In fact you can already do it, Find your Duck Game folder in steam, find the default maps, copy de folder containing all maps, paste them in your custom maps folder. Remove those you don't want (or disable them on Duck Game). Then in Duck Game, Toggle the folder containing the maps and set 0% default maps in match setting. Not only you will be able to choose which map you want, you will also have the Skip option in pause menu.
