I made an experiment a bit back for a hard-to-kill plane myself. It turned out fairly well. The approach I used was basically the WW1 concept of plane building: Make a skeleton and control surfaces out of steel (and the mount points for important parts like the engines), use something lighter but still decently strong for semi-critical parts, then make most of the rest of the plane out of plastic, wood, and foam. Hell, even mostly foam works.

The idea is: "It doesn't matter if the wing gets a few holes in it, as long as it doesn't get torn off outright." And a simple skeleton made of something immune to machine guns means that no critical attachment point will get shot off by MGs. And thus, the only thing that can tear off a whole wing would be a tank round.
