I know that WoL already uses quite a few AoM assets for buildings and units so someone on your team (or at least a former member) must know more than I do.
@Amonium - If you read the first comment on this mod you will see my todo list for this mod. Trees are the very next thing I'm working on. I have actually been porting tall grass from aoe3 but the mip mapping in AoM is making it look pretty terrible so I will have to see what can be done about that.
I've always wanted to see leopards in AoM. They'd go well with African jungle maps, especially since they're the apex predator of the African rainforest (lions prefer the savanna). Jaguars and leopards are technically different species, and you can tell them apart by differences in their spots and physiques, but I think the jaguars you've ported from AoE III would make a workable leopard substitute in AoM.
Next on the todo list:
- finish porting animals from Asian Dynasties (there are only about 5 left)
- port all the trees
- port all the grass and other interesting embellishments (I probably won't port rocks)
- start a new UMC AoE3 pack for buildings and military units (this is very far down the road currently)
My modeling guide has a section specifically on how to port from AoE3 if you want to try porting stuff for yourself, section 5.2: http://aom.heavengames.com/downloads/showfile.php?fileid=11367
