Report a translation problem
Every time you subscribe to a mod, this mod is directly extracted to your game folder, overwriting the actual game files (instead of saving the mod somewhere else, therefore you can't just deenable mods).
After this initial installation, the files are only touched again when subscribing to a new mod that overwrites the same files, or in case you verify your game cache. At that point, every original game file will be reset to default and then changed by the one from the last subscribed mod changing it.
So for these dirt files, you just need to copy them to your terrain\textures folder to use them. But this setup will be broken everytime you subscribe to a mod also changing the dirt, or verify your game cache. So you should save the files somewhere so you can recreate this setup at any time (as I said this could also be done automatically with my tool, but unless it works with wine, you have no other choice than doing it on your own).
In the pack the actual dirt terrains are covered with desert, while the gras terrains do show the 'normal' dirt terrains. So I added both, but you can easily identify them by name. :)
For my mod manager, I can't tell you, I never used a mac. It needs .NET Framework 4.5 to work and is installed by using a windows installer. Beside this it will try to save some files in your AppData folder. So in case all this is possible with wine, it could work. At least we would know it afterwards. :)
Beside this you can also do this manually, but be aware each time you verify your game cache, subscribe to a new mod or install a patch that includes these files, this setup will be broken, for AoE2 officially doesn't support this functionality.
To do this manually, go to AoE2\mods and open the mods archive file (these files are extensionless zip archives). All terrains are located in terrain\textures. Just save the files you want to use to somewhere else, and copy them to your AoE2\terrain\textures folder each time you need to reset your own mod mix.
As I said, this is more easy by using my tool, for it takes care of your mod setup automatically and you just need to click a button to reinstall it later.

Da wird definitv noch mehr kommen, allerdings liegt mein Fokus momentan auf den Weltraumsachen, da mir ein bischen ein guter Ansatzpunkt bei den 'normalen' Grafiken fehlt.^^
Ich hoffe, dass du weiterhin tolle Mods für dieses schöne Spiel rausbringen wirst,

3 Dinge kannst du probieren, um beides zusammen zum alufen zu kriegen:
1. werden die Mod-Daten während des Startintros (vor dem Schach-Video) geladen, brichst du es vorher ab, können Daten fehlen.
2. hat Steam teilweise Probleme alle Mods korrekt zu erkennen, da kann es helfen, alle Mods, die du deabonniert hast, aus dem 'Mods'-Ordner zu löschen, und danach deinen Game-Cache zu verifizieren. Das löscht alle geänderten Dateien, teilweise werden Änderungen von Steam nicht richtig erkannt, wenn die Datei schon geändert wurde. Wenn die Daten aber fehlen, werden sie beim nächsten Spielstart während des Intros aber korrekt nachgeladen.
3. gibr es scheinbar eine Modgrenze, die beimir und anderen bei 30 lag, danach wurden weitere Abos einfach ignoriert, bis andere Mods deabonniert wurden. Dafür eignen sich vor allem Szenarios, da zusätzliche Daten nie gelöscht werden. Die Karten bleiben also spielbar, obwohl du sie deabonniert hast.
Every file is overwritten by the last subscribed mod changing it, so you just have to subscribe to any water replacement mod after this to combine them.
