But if you want to change the stats, you'll want to go to Steam\steamapps\workshop\content\446800\1741620392\res\models\model\vehicle\train\usa\Quintuplex.mdl, open it in notepad and look for the line topspeed = 80. Change that to what you want in kph.
The canteen's got a top speed set at 96 so you may need to change that too depending on what you're setting it as - you'll find that in vehicle/waggon/usa/Quintuplex_Canteen.mdl.

@VandelayOfficial: I'm considering a couple of things at the moment but haven't settled on anything. A lot of people have requested a Garratt in the past, so that's a consideration now that I know how to make one work.
The very first version of this loco had the light particle placed correctly, but starting from the second version it's hidden inside the front cabin. Can I fix this myself by editing some text strings? Once I managed to add lights to a train that didn't have them, but it was so long ago I don't remember how I did it.
I'm no expert in modding at all, but I wonder if this is somehow related to the fact the canteen doesn't seem to fit into any type of rolling stock. You can only buy it if you set the "all" filter on the depot, it doesn't appear if you filter by locomotives or wagons. I've also noticed the canteen has a driver inside.
Also, I just posted another update (New horn sound taken from the Big Boy and some minor model fixes) so try again with the new file and let me know.
If nothing else, gr1m has made some of us aware that such strange beasts did exist!

@SoftwareSimian: Yeah, it's inspired by those designs, not a direct reproduction or anything.
I wanted to "report" something. I say "report" between quotation marks because I assume gr1m already knows about it, but I'm telling anyway. There are some fixed wheels like "hanging" below the model in the middle between the rails, it's noticeable when it goes over a bridge. Other than that, awesome mod, this might be silly and unnecessary to some, but I love non-ordinary things like this.

The IRL triplexes literally used so much steam at once they couldnt go beyond 3 MPH
