It's because in Muslim culture(mostly Sunni Muslims) they believe that visual depictions of Muhammad should be prohibited. The key concern is that the use of images can encourage idolatry. However it's more likely that Firaxis doesn't wish to disrespect their culture, same reason there isn't a Jesus great prophet and instead a John the Baptist
98% of chase it's because Concise UI does not play nice with the Prophets and Theologian modules, so either disable those or look into how to disable the CUI Great person module (or the CUI mod entirely.)
