i type in 1000 in the alt hold and turned it on but it did nothing for me

No it is the same system in several of Saviation aircraft, type in an altitude and then turn on the alt hold.

the alt hold wont hold the plane in the sky instead it does nothing and and i had to keep the plane in the air manually

No clip is a easy way to move around in stormworks. Click the home button(on the right side of your keyboard, next to the keypad) to fly through walls and fly. Click it again to go back to normal. To better understand no-clip. Just look at some newer stormworks tutorials
