The DM only maps of Caribbean Life seem very basic, but I'd love to play the episode in coop.

Originally you could play those in multiplayer. It's just Steam that lacks multiplayer for these addons.

Were the original expansions without multiplayer capabilities indeed? Or just for Steam versions?
