I'm not sure if something broke but the engines overheat now and I barely get any generation as it fluctuates wildly

I have successfully converted it to steam! My first successful steam engine build! It uses a lot less diesel this way. Or I can turn on the electric furnace, in which case it doesn't need fuel at all.

Just a heads up, the fuel in/out switches seem to be backwards. In is pumping out and out is pumping in.
