How large varies on many factors, from a solid asteroid to hollow, to your video card memory.
All i can say is, if Space Engineers crashes when you load your game with a new asteroid, then that asteroid is too big.

@Ace86 I've updated SEToolbox. You can now generate your own sphere asteroids.

Can you do one at 600 meters with a shell depth of 30 meters?
