Sinking is added, sink key is in the engine room above the propeller shaft. (See picture)

Thats correct, Most of the hull is linked together so simply opening the cargo hatches/engine room will result in a capsizing, if not a sinking.

Any ship can be sunk with a door, window, or hatch to the outside if you are in the far ends of the map in waves with extremely deep waters, or the arctic. Arctic is more of a challenge due to the freezing temps so if you want a deep sink without freezing when survival is on then go to the lower end of the map, extremely warm and extremely deep.
