I newly learnt there is a spy system, after 81 turns and 300 hours playing with the Nanman :')
In Game Description : Trigger a civil war between those most loyal to the spy and those less satisfied with their rule, strongly reinforcing your influence over the faction in the process.
Mod's Additional Notes : Your spy must be the target's Faction Leader. Spawns a new rebel faction from the target faction. Target faction must have more characters under 25 satisfaction than otherwise. Settlements must have negative 50 public order to defect.
I haven't been able to figure out the question that I left in the mod's description.

No, they don't know it was your spy. If you are already at war, ,and your spy becomes rebel faction leader, they start off at peace with you and have positive diplomacy towards you for "liberating" them. I believe it's the same (without the positive feelings) if the rebellion does not include your spy, but they will likely declare war on you because they retain memory of previous hostilities.
By the way, if you want to test easily as you mod, slap on a negative satisfaction mod for the AI and trial & error what happens as you tweak the negative value.
To trigger civil war:
In campaign_variables, there is a key called civil_war_trigger_threshold...=1 and the description is: (IN GAME) (sum of joining separatists rank / sum of loyalists rank) >= this value.
I have had the instigate civil war action click thru but nothing happened before because every character was satisfied.
Who joins the rebel faction?
In campaign_group_civil_war_defection_loyalty_thresholds, 75 is the threshold for your spy to become the rebel leader, 25 is the threshold for satisfaction for other characters, -50 public order for defecting settlements. There's also a 50 public order value for spy_public_order threshold which I'm uncertain about.
