It happens because instead of needing twice as many sprites for a body part, the game just flips the facing left ones when he's facing right, so the text is backwards. I guess another thing would be to have him on the right hand side of the menu when you select him so he'd be facing left?
Hope this helps in some way, it's just a limitation of the game and not a problem with the Vader Time text specifically. You just can't notice it with most other parts since they're symmetrical.
