This is going off of memory, so take it with a grain of salt.
You need a couple of extra tags. Let's say you're editing plump helmets. You will need to first remove the vanilla plump helmets with:
[CUT_ORGANIC:HELMET_PLUMP]
Followed by your custom version of the plump helmet.
This pattern holds for most things, where you have to fully remove vanilla before editing.
The exception is [SELECT_ORGANIC:ETC] which will open the tags entry and add any tags you add, but still won't overwrite the existing tags.
@RoyalFox - I couldn't say specifically. I suggest you either ask at the Workshop forum here, or post your raws at any of the modding sub-forums (discord, bay12).
