It's great to see his music make it into another game mod

To do so, you need to verify your game cache after unsubscribing.
And in case a mod added new game files instead of replacing default ones, you need to delete that additional content manually.
For soundtrack this is all files beyond xmusic20.mp3 from AoE\sound\music.
The only way for now to uninstall mods automatically and completelly, is to use my mod manager (only works for mods also installed using it).
If this step is already bugged for you can only try to unsub and resub several times, this mostly helps.
Another reason for this not working is you already reached the mod limit - something around 30. In this case, unsub some maps - they will still be there, but you have empty mod slots again.
In all cases I'd recommend to delete your AoE\mods folder and verify your game cache to clean your mods (AoE never deletes unsubbed mod archives itself - so storing all your old stuff can also lead to bugs.
If this time wasn't enough, you can restart AoE some more times to give AOE more installation time (AoE stops doing so when the chess sequence starts). Or - for the mod archive is in AoE mods now - you can extract the file (Extensionless zip archive) to your main AoE folder now.
So for me it's ok. :)
Just as an explanation regarding the missing tracks:
Subscribing just downloads mods to your temp folder.
They are moved to your game folder ansd extracted while the intros are running (until the chess video starts). So canceling the intro too early when installing larger amounts of data, leads to a cancelled installation.
Every file that wasn't installed because of canceling the intro or because there just wasn't enough time to do so before the chess video started, will be installed at the next game start - and so on.
