I haven't seen everything new so far, but so far the event chain has me hooked, I actually like this a lot more than "click button convert", I'm excited to see the rest of the events/content as I play
also I kinda hope some of the monuments in rome got slightly nerfed, the amount of dev those gave you was insane XD

Religious events around Gemistos Plethon and his Pythagorean Academy in Florence who essentially sparked the Renaissance, interest in the arts, philosophy, and religion.
You could also use the national skill trees to promote or oppose the conversion. There were a lot of historical characters who were enthusiastic to practice the old religion. You could use some of these famous philosophers to increase missionary power, open new centers of reformation, convert entire provinces, etc.
