I am sorry to hear about those co-op issues you were having. Unfortunately, this is a problem only 343 can fix. This type of multiplayer AI mod is not really co-op friendly. There will be AI de-sync issues for clients that try to connect to the host player. For the host, everything will be okay. Clients will see visual anomalies like animation issues, invisible enemies, and more. So with these types of maps right now, they are played best solo. Sorry about that, but this is just a current limitation of the MCC right now.
Either of these ways will work with the mod, however I recommend Forge as you can change teams as many times as you want without the game ending.
