Yes you do, it's called throttle, meaning a number input, if its 0 it does nothing, 1 is full throttle.

do i have to connect the gimballed rockets throttle to anything

You can, select the controller with the select tool in the editor.

can you maybe add so you can externaly controll the sensitivity of the gyro?
