Closest you'll get as it stands is the Caper Monterey/Chevy Lumina from Project Cars I made ages ago.
I just gave the foxhound a lot of thrust for the hell of it. You're not gonna achieve anything remotely realistic within gmod.
I'd almost rather taking a crack at making my own flight game just so I have less restrictions.
The limited map size and the mediocrity of infmaps are also both just demotivators.
