I find it absurd that people are using their experience from another video game (albeit one 'based' on real life) to make assertions that systems with up to 7 stars can exist.

Yes, they exist in real life. But not because you saw it in a video game.

Hah, system with Neutron, Pulsar and blackhole just gonna delete any way for fleet to escape or fight normaly.

As someone with near 5,000 hours in Elite: Dangerous, can confirm. As we know it, systems like this are indeed possible irl.

For Stellaris, it might be quite the challenge to balance, but it could be done.

Nah, systems could have more starts in them, just look at Elite Dangerous. There blackholes in Maia and several stars in it.

The number of stars are possible but these orbits are hardly stable. If you'd look at any large star system you'd see that they team up in binaries of binaries,

stable orbit? probably, able to host life other than a very simple ? probably not]

Septuple Star Systems Exist, Octuple and Nonuple may also be possible.
