For food I use many mods such as:
Vanilla plants expanded
Vanilla cooking expanded
Vanilla brewing expanded
Medieval overhaul
Milkshakes digital deluxe
The categories are as follows:
Protein: meat, milk, eggs
Vitamins: berries, mushrooms
Dietary fiber: potatoes
Carbohydrates: rice, corn
As others have commented, food has different nutrients (for example, meat can provide vitamin D).
Also, you can't get essential nutrients from the emergency rations you have at the start of the game.
This is probably because the flags for ingesting nutrients vary depending on the ingredients.
I don't have any complaints about this design itself, but I think many people who are left behind will rely on emergency rations for the first few days, so I think it's too harsh to not be able to get any nutrients at all. I'd be happy if they changed the way foods with unknown ingredients are handled.

If I could make a request to the author, I would be very grateful if it added compatibility with mods that expand the variety of vegetables, such as VGP.
At the moment I don't know how to get pawns to get enough dietary fiber, so many of them suffer from indigestion.
I would also be happy if some kind of mitigation measure was added for species that can only eat raw meat.
I'm sure updating will be a lot of work, but I'm eagerly waiting for it.

Just so you don't absolutely break some ideologies and isn't too punishing when playing certain ways, and maintain some realism.
I know this mod is still under development but thats my insights.
Carbohydrates are an efficient energy source in terms of how our body breaks it down, they however are not required nor needed as our bodies are fully capable of turning proteins into energy, although less efficient.
like if vitamin bar is full you get +5% imunity gain speed, protein +1 melee damage, etc and if you got all bars full the buffs get 1,5 multiplier or a +5% workspeed.
