Settings>UI>Moodle Size: Any Value besides "Scale with Font Size"
- I'm set to 48 on a widescreen.
Accept, apply then go to menu and re-open the world. Little tedious, but I am on a widescreen and default moodles are tiny. This is also how you adjust default fonts/ui in game as they never apply afterwards and require a reload.

I'll fix it once and for all after 42 stable release
I changed the font settings to default and reloaded the game, then disabled and activated the game again, and it works now.
Indeed, apparently I misunderstood, did as you said and it worked, thanks for your hard work !
Settings -> ui -> moddles size -> select numbered value (not adaptive to font size), then reload game and it should work
Also use Mod Comparer mod to prevent any issues
Devs could change everything again cause it's unstable build
but at the moment working following your size advice
