Yes, I saw that I have a patch for updating the bar - a Dynamic patch for Europe.

I just tested it out and it doesn't need water.
There is either another mod overriding/conflicting with it or you are using older seeds.

First try looking at the item discription and check for the purple text that says which mod its from, it should say "Easier Gardening - Baroverhaul Compatibility" under the banana in purple, and if it says anything else other than that then it's the name of the other mod that is overriding it.
another person was having the same issue as you and they said that it was either "dynamic Europa" or "barotraumatic"

And if you are still having issues than try replacing all of your outdated banana plants.
