If you want to start a new game anyway, I would have just unsubscribed and verified my gamefiles if necessary. If you want to play with your old savegame it may be more complicated.

The new x:r cockpits have numbers 1-3 in their filenames.

I just started a new game (free play) went to the nearest mechanic and bought the cockpit.
Everything worked as expected.
The cockpit is still there in my existing game. I will test the mechanics list later.
I believe its possible but I do not how and how complicated thast would be.
E.g one should see blue lines when in long range scanning mode
Maybe useing a displaypart, a self created sign or only a little part of one of the other cockpits to glow? The function for that could surely be found in the other cockpits ;}
However, I love the open view and clickable targets in the complete screen :}
