Since your using tons of mass blocks (try using space balls since their mass is adjustable) theres plenty of mass to be pulled onto the track, and losing grip from accelleration shouldnt be much of a problem. you have to experiment and play with the settings to see how low you can go with friction before starting to wheel spin.
Also, i think with the recent updates, the symptoms of the shakey steering are not as severe as they used to be when using slightly higher friction. i been building vehicles to prepare for the upcoming planets update, and my little rover that struggled turning with friction above 15% has no issue at ~25% now.
@Mr. Aww Yeah - I found your thread a couple of days ago, and thanks so much for the useful info you've found out. :) Playing with various wheel settings (and friction) has helped a bit, but I'm still trying to find what works and what doesn't.

my solution so far is lowering the friction down. How much depends on the size and mass, so some experimenting is needed. on my 12.9kg rover, i put friction to 15% on all wheels, and its plenty stable to drive and turn without the shaking, but also high enough to not act like im sliding on ice.

If it worked in survival than your system would be a good way of laying track. :) Dunno about planet surfaces though. Maybe you'd be able to mount your system onto a wheeled vehicle or something.

FOR THOSE WANTING EXTRA TRAINS: I'm collecting a list of suggestions to add to a third train map, if it ever gets built later. However, me and Ravric have shown that this sort of thing is possible - Why not try building your own train maps? :P
@XCanG - The map was built for fun, and was designed to only work in creative mode. The reasons for this are stated in the description. It uses SE's survival mechanics just for extra detail.
@Banana - It's vanilla, other than the skybox and a building tool.
@jmsabins48 - Yeah but the Dawnstar train was designed to work in survival mode, although trains are sort of redundant in survival anyway.
