Apologies for the late reply, but the dice are used to determine when a "Sabacc Shift" happens. A "Sabacc Shift" has the dealer shuffle all the players' cards together and deal each player new cards to replace the ones that got shuffled. The dice are rolled several times throughout the hand and if doubles are rolled, a "Sabacc Shift" occurs.
