Thank you! This is the only mod I've made that I currently do plan to port over / update so that I can use her on my XBox One copy of SSE. I'm not sure when that'll happen though. I fell back into World of Warcraft and all my console games when I'm not defending the free world.

What you're asking is impossible. You would have to have the original voice actor Bethesda hired to redo all of her lines, but in a nicer tone / friendlier way of speaking.
Did you do anything with any other mods inbetween when you installed her and when she no longer appeared as intended. If your load order is out of whack, character mods will not load properly and they will appear as their "vanilla" selves for redos of base game characters.
Character Mods need to load last by default. This will prevent other mods that affect characters, body styles, etc, from overriding the intended character mod.

No. The height is part of the character. She is a Barbarian. The height doesn't affect anything in the game, such as doorways, etc. If she needs to become smaller to get into a bed or step through a door, the game will automatically scale her down for as long as she needs to be to accomplish the task, at which point she'll "grow" again. It happens with all NPCs on the taller side, but no one seems to notice it.
She doesn't come equipped with armor. She'll wear whatever you want her to, and you can take anything off her.
Per the description above, the armor she is in the photos in belongs to another modder. I just chose her to model it in those pictures.
Note the description: "The armor Lydia appears in above is the Argent Armor - Royal Retexture....."
This armor is not included with this mod, nor is the bodystyle shown (curvy). If you download the mod, you will find that Lydia is dressed quite normally unless you, as her Thane, give her different armor to wear. That said, the armor I chose for her in these picture sets, is supposed to capture her new abilities. If you see her in combat, you'll see she cannot be weighed down by bulky armor.
She's meant to be Amazon size as the mod description states. This is Lydia as a barbarian.
The skin tone is an issue with your game files and installation as many on here (including myself) have echoed. Steam most likely did not install the mod properly (the face files most likely), which causes this.
Long hair isn't something this mod has nor supports. I got rid of the Apachii SkyHair requirement due to numerous user requests, and it's not going to make a comeback. She is how she is. Sorry.

Deleting the files in those two folder paths will fix any corrupted skin tint files, etc, that are messed up in your game on the next reload. PLEASE be sure you have Skyrim shut down before you do this.
Sorry you had issues uninstalling the mod. Unfortunately, this is on Steam's end, really, and there's nothing I can do about it except recommend you use the superior Nexus versions.
What I am guessing is that when you unsubscribe to the mod here, it does not uninstall it properly, causing this issue. You can try resubscribing to the mod, then unsubscribing again, and hoping Steam will correctly handle it.
If that doesn't do it, you can download the Nexus Mod Manager from Skyrim Nexus and use that to install / uninstall any and all Skyrim Mods, including this one. Alternatively, you can also go in and physically delete the files. You will need to go into the Data folder and follow the following two paths:

She's set to gain levels alongside you, all the way up to Level 80.
I think in Vanilla Skyrim, she never goes past Level 30 or somesuch.
Lydia's initial level is set by whatever level you are when you encounter her / complete that portion of the main questline. Same for all followers, actually.
