I mean that there is actually only an interior for the bridge section of the GR75, most of the ship is inaccessible space filled with machinery, or cargo space

Yeah, the itnerior is the bridge module, then craploads of cargo containers

the interior is pretty much alot of cargo, it is a transport after all

as far as the inside of the ship goes the rebellion used the GR-75 becase it was a modual craft kind of like a container ship it can have troop pods or even carry small vehicles like speeders and equipment for troops and outposts.
