I imagine what you're facing is a compatibility issue. If you try loading this mod after any others you have then it should over rule any conflict. You can do this by using the Skyrim Launcher - Data Files and moving The Essential Horses to the bottom of the list.
I'll also test in game to see if I can duplicate the problem.

I have no idea where to start with a mod like that. I'll have a look into it but I can't promise anything.
The mods will try to overwrite each other. If one comes earlier in your load order, that will be given precedence. That means you'll only be able to have one enabled to edit the horses.
