I have posted your request on Torchmodders.com to expand this further!
http://torchmodders.com/forums/modding-questions/is-it-possible-to-change-the-function-of-shift-to-a-different-key/msg7459/?topicseen#new
I hope you don't mind!
^_^
Inside the settings.txt are the assigned default keys
The shift key function is this:
KEYMAP_HOLDPOS :16

P.S. I have not tried changing this myself, if this does not work for you, then we will try the mod possible solution.
I have to say that many other players from the General Discussions including myself are interested in this possibility of changing the Shift key functions over to another source!
^_^
The easiest way to find your settings.txt file is to open your Steam Library, right clickt on Torchlight 2, select Properties, go to the Local Files tab, and select Browse Local Files...
After that, go to My Games/Runic Games/Torchlight 2/Save/[NUMERIC STEAM USER ID] and open settings_sdl2.txt. Note that if you're using Mods, you'll need to replace /Save/ with /Modsave/ to find the right file to edit.

Unfortunately, settings.txt hack doesn't work. Also, as it turns out, "Hold Position" keybind can be naturally changed in-game but the problem is that the Quick Transfer Item function has a different keybind and not related to "Shift" keybind. So what we need to change is the "Shift+LMB" keybind but it is not found in-game, in the game folder, or anywhere in the mod-able files.
We might have to consider the possibility that the only workaround to this, is by a 3rd party program that will able to redirect "Shift" key function for you.
But if you already have a way to a controller, why can't you just simply use the controller's button to "Shift+Click" things, unless there's no way to do that in a Mac?
Here's my setup for my custom controller profile
