If you had a population of 80, it seems that usually about half the population are kids and another quarter are "old". So 54 Raiders most likely will win against that number from what I've seen. That's just been how it's worked for me so far.
I've seen the alarm thing mentioned, but haven't found where or how to do that.
Towers do break quickly, but if you put enough of them together then they can really help thin the enemy out and save you from taking casualties. I found that raiders would only attack walls if there wasn't a gate nearby so it's actually better to spread gates around your town and then concentrate your towers around them (I was using up to 8 towers per gate by the end).
But if you have a gate, just a single gate in the open field with no walls, if it is closer to raiders than village cnter or other gates, people would gather there. And raiders moves to it first.
And yeah, towers fall way too fast to arrows and thrown spears. It would feel more realistic if they were resistant to non melee damage. Have axes and picks do bonus damage to make up for it.
