Help Work orders - Am I doing something wrong, is this by design, or possible bugs?
I recently started a new world and fortress specifically for testing game mechanics. I want to learn to min max work order management as I am planning a mega project map and I feel that understand this will help things go smoothly.
So far, I have found the three following issues. I am not sure these are user error, by design, graphical/user interface, or feature/functionality issues.

Issue 1: Unable to designate specific wood type for beds
When making a work order for beds, I am attempting to specifying the type of wood. The menu opens, and I make my selection. Once Selected the work order doesn't update to indicate that is is now a <wood type> bed, like it would for example a "wooden apple bin". In my limited testing bed are not of the material type I selected, even though they were selected.

-Workaround: I believe I can work around this issue taking from a wood stockpile that designates the specific wood. (I will likely use this workaround later to setup for magma specific materials so multiple workshops can pull form a singe magma safe stockpile without multiple specific work orders).

Issue 2: Unable to remove designation for material selection.
In testing the above, when creating a wooden bin work order, I found that you can't remove the designation of a material. You can change it, but you can't go back to using whatever is available. Once I was done testing, I then found that I was unable to remove the designation like you can when assigning a bedroom, or other similar selection menu.

Issue 3: Removing active work orders created in the work orders screen from the workshops active list can cause work orders to stop working. I am not sure if this is an issue with the work order, the workshop or the manager. But every time I have canceled an order created by the manager, the work orders stop being activated. The manager will create other work orders, but not those that I manually canceled. I stopped doing this, and haven't tested since the latest patch...

-Workaround: The only way I was to address this was for me to delete and re-create the work order and workshop.

Additional Question: Is there a simple to view list of the current know bugs and issues, or an alternative to the Mantis bug tracker? I have had no luck searching mantis.

I just confirmed that Issue 1: is just a graphical UI bug. If you go into the work order conditions it will list the specific wood type. I previously had multiple work orders for beds and couldn't tell them apart. Blame the loose nut on the keyboard for this on. Still haven't figured out 2 and 3.

Also because I didn't see it in anything that you wrote work orders can also be managed from the work order screen that allows the work orders to be propagated through all workstations, work orders don't work like this if you make the work order on a workstation, the work order is only carried out in that workstation.
