Investing into diplomacy early on helps but also the way AI calculates stuff in Rome 2 means the more enemies you have, the more are yet to come as in AI eyes, the more wars you have, the weaker you are, even if you are winning easily.
Once you learn the ropes, DeI is a lot easier to the point of even VH being too easy for some.
If you want easier start, Ptolemaic Egypt is probably the easiest faction due to rather good income and less enemies. Baktria is very fun too and you can't just get free defence zone from map border but supplies are a lot more difficult there due to nearby deserts.
Now we have made a lot of submods so maybe you should give this one a go.
Its basically made for new players or people who want to have a bit more relaxed campaign. It makes start easier and just adds the difficulty as you grow:
