For single player and online multiplier, enter one of the garage menu locations in Adventure Mode (you spawn next to one)

With split screen you pick the car/colours before playing.

Colour variations are unlocked via different levels/medals. You can find most of the cosmetic unlocks on the Fandom wiki page[zeepkist.fandom.com]
