Am I missing something?
I've been free-form farming for a while but now I have a situation where I want to plant in somewhat exacting intervals for garden purposes - does this concept simply not exist whatsoever in the context of ME, or is there a mod for "farming snaps to grid" (or maybe a vanilla feature I have been oblivious to all this time)?

There's nothing for that, no. You can kind of just manually try to do it in a grid. But, to be fair, planting like that is for early game, you're meant to make farms with the farming blocks

Ahhh, I haven't really tried to mess with those yet, I can be a bit of an accidental luddite - I see "tech and machines" and I just automatically assume I am too stupid to use them even though I am usually just fine at it when I eventually try.

At any rate, do those achieve (relatively) even spacing or are they also subject to the haphazardness of "wherever it permits placement soonest"?

They generally place evenly, yes. They're fairly simple - you run the plows over the ground and they plow, put seeds in a seeder and run it over the ground and it plants, and run a harvester and it harvests. You can make a cart with harvesters first, then plows, then seeders to harvest/replow/replant a farm in one pass
