Sounds like quite the OP sub you're after, and all in a T1 package. Consider T2 as well though, you can start on a T2 if one is cheap enough (or just gift yourself more starting credits to afford one). I doubt a T1 sub is going to have much space available for these EA fabricators (I don't know what they are), as most T1 subs will by necessity probably be small and compact.
I'd recommend one of my workshop subs but I get the feeling they wouldn't meet your requirements. FWIW I play mostly solo so I try my best to make sure my subs are very good for bots, but most of my subs are T2 and basic scouts (which enables them to have a mineral scanner, pretty much a must for a solo player, and I prefer to build stuff like circuits etc during the campaign).
They have some nice larger and themed tier 1's and also have great T2 and T3 options.
Like Buggy Boy said though, T1's are not meant to be good and what you seem to be looking for is really just a T2.
Also movable wrecks also has a hook that you can use through a depth charge launcher, so you don't necessarily need a bottom docking port.
