It's been a while since I've done it, but I think the difficulty in the Keep will scale to a specific difficulty if you create a custom game of the difficulty you want. Having the notification in the corner showing the player count and that the Bridge of Shadows is open is a small bother since it does take up some screen space, but it should otherwise be a simple workaround.
