Keeping the game on older version with mods
If I want to keep the game on 1.5 when Odyssey releases to continue a modded playthrough without bother, is it enough to just copy all folders from steamapps\workshop\content\294100 to steamapps\common\RimWorld\Mods?

Sure. Just remember to keep an eye on Steam around release time for 1.6 and opt into the 1.5 branch before allowing it to update. And unsubscribe from the mods after doing so, otherwise you'll have duplicates. Once you're done with your current playthrough, just delete all the mods again, resub anything you want on Steam, and opt back out of 1.5 to let the game update to 1.6.

Or do what I do, and copy the whole game to another location, then copy the mods over and just play that version from the game exe in the folder instead of via Steam. Your modlist is already set up and saved, so the game will still load all of those just fine.
You should also make a separate copy of your configs (refer to the readme in the game files).

most mods are compatible with 1.5 and 1.6

the way their file structure is, the internal mod as folders for 1.5 and 1.6 each with their own code made compatible for that version. if you swap versions it just reads data from that specific versions folder.
